Nicole’s Best Gluten Free Multipurpose Flour
Sally O. - Pennsylvania
[Using Nicole’s Best] is probably the first time gluten free bread was still edible by day three, we had sandwiches with mayonnaise and fresh tomatoes from the garden. Another A+!!!
Mary D. - Saskatchewan
[T]he flour … is very fine and has no gritty texture when baked. You’d never know I used gluten free flour.
I like that the xanthan gum is added in and in appropriate amount for each recipe. Most other flours I’ve used has the xanthan gum in the flours so you don’t know how much is in each recipe.
Susan B. - California
Even several days later the texture has held up. It didn’t turn into a brick the next day as other GF breads seem to do.
Denise P. - Amherst
In general, the ‘nicole’s best’ flour performed wonderfully… great results, tastes good, smells good, texture in the baked goods is excellent.
The cupcakes [made with Nicole’s Best] are delicious, tender, absolutely no grittiness or gumminess… amazing actually.
Amber N. - North Dakota
This is possibly the best blend I have used since being diagnosed celiac 10 years ago. The texture comes out very smooth and no odd tastes or textures. There is no crumbling or dryness, just perfection!

Your flour blend is perfect.
Purchase flour alone or with 2 ounces xanthan gum
How much xanthan gum should I use?
Nicole's Best Multipurpose Gluten Free Flour does not already contain xanthan gum, which makes it an extremely versatile blend. Still, almost every one of the recipes on Nicole Hunn's blog, Gluten Free on a Shoestring, calls for xanthan gum. That means you'll have to add the right amount to each recipe for it to come out properly.
Unless the recipe you are making does not call for xanthan gum, you will use a variable amount of it depending on the category of recipe. Please use this "Nicole's Best Usage Guide" to determine how much xanthan gum to use per cup (140 grams) of the flour in the recipe you're making. To view the chart fully, click on the image.
For example, if you are making yeast bread, and the recipe calls for 3 cups (420 g) of flour, you'd add 3 teaspoons of xanthan gum to the recipe.
Right here in this shop, you can purchase enough xanthan gum for one 5-pound bag of Nicole's Best alone, or as a bundle with the flour blend.

Gluten Free Flour FAQs
What is gluten free flour?
Gluten free flour is any type of flour that does not contain any gluten. Gluten is a protein found in wheat, barley, and rye, and can cause digestive issues for people with celiac disease, gluten intolerance, or a wheat allergy. Our gluten free flour blend is made from a combination of non-gluten grains and starches, such as rice flour, potato starch, and tapioca starch.
Do I have to add anything to Nicole's Best to use it in a gluten free recipe?
Usually, the answer is yes. Unless you are making a recipe that specifically does not call for xanthan gum, you will need to add xanthan gum to the recipe, since Nicole's Best does not contain any. This allows precision in baking! Please use the Nicole's Best Usage Table below as a guide. You can purchase enough xanthan gum for a 5 pound bag of Nicole's Best here individually, or as a bundle with the bag of flour. What can I use gluten free flour for?
Our gluten free flour blend can be used in a variety of baked goods, including bread, cakes, cookies, and more. It can also be used as a thickener for sauces and gravies.
Why do I need this gluten free flour blend?
If you've followed the Gluten Free on a Shoestring blog for some time, you've noticed that Nicole's favorite all purpose gf flour blend has been Better Batter's classic blend. That's still a great blend, but it's not flexible enough to use for every application.
This Nicole's Best multi-purpose gf flour blend is flexible enough to use for everything from gf crepes and pancakes to gf yeast bread, and everything in between. It is the most versatile blend that Nicole has ever used and it works in all of her recipes, no matter the category.
I can't have dairy. Can I still use your flour blend?
No. Our multipurpose flour blend contains milk powder, which is a dairy product.
Is your gluten free flour organic?
No, our gluten free flour is not certified organic, but we use all high-quality, non-GMO ingredients in our flour blend.
Is your gluten free flour vegan?
No, our gluten free flour is not vegan because it contains cow’s milk powder.
Is your gluten free flour nut-free?
Our gluten free flour does not contain any nuts, but it is produced in a facility that also processes nuts (peanuts and tree nuts). Although we take precautions to prevent cross-contamination, we cannot guarantee that our product is completely free of all traces of nuts.
How should I store your gluten free flour?
We recommend storing our flour in a cool, dry place, such as a pantry or cupboard. It can also be stored in the refrigerator or freezer for longer shelf life.
Can I use your gluten free flour as a 1:1 substitute for regular flour?
No. No gluten free flour blend can be used as a cup-for-cup (or gram-for-gram) substitute for conventional all purpose wheat flour in conventional recipes. Great gluten free baking requires great gluten free recipes, since even the very best gluten free flour blend behaves somewhat differently than any sort of wheat-based flour. But never fear! We have the best all purpose gluten free flour blend, and all the best gluten free recipes for everything you would like to create.
The Story of Nicole's Best
It all began in 2005 with a shock.
Nicole Hunn’s son, Jonathan, was diagnosed with celiac disease when he was barely 1 year old. Like many others dealing with the abrupt switch to gluten-free, Nicole found it confusing, incredibly overwhelming, and nearly hopeless.
At the time, gluten-free foods were scarce, expensive and often tasted inferior. So Nicole started experimenting in the kitchen, looking for the secret to gluten-free meals and desserts that her whole family could enjoy — and others could duplicate in their own homes.
Now, nearly 20 years later, 5 Gluten Free on a Shoestring cookbooks, and many hundreds of blog recipes later, she’s proud to introduce Nicole’s Best Gluten Free Flour. It’s designed to make gluten-free baking accessible to all, regardless of level of your experience. Better than any gf flour blend she's ever recommended, this one is fit for every single application you can imagine.
No more buying and storing multiple gf flours. No more spending a fortune on fancy, overpriced ingredients. Nicole’s Best is here to make your gluten-free life easier and more delicious — all without breaking the bank.
