Nicole’s Best Multipurpose Flour was developed by gluten free baking expert and author Nicole Hunn, based on decades of developing and testing recipes for her website and cookbooks.

Nicole's Best is a gluten free flour made with premium ingredients and has a smooth flowing texture that can be used in breads, pastries, sauces and pancakes. 

Available in 2.5 LB and 4.55 LB bags.

Made in the United States in a dedicated gluten free facility.

Ingredients: white and brown rice flours, tapioca starch, cornstarch, nonfat milk powder, potato starch. Contains: milk.

For best results, add the following amounts of xanthan gum to your recipes when using Nicole's Best. 

Amount per cup (140g of flour)

  • Muffins and Quick Breads: 1/2 teaspoon
  • Drop Cookies: 1/4 teaspoon
  • Yeast Bread: 1 teaspoon
  • Cookies (rolled and cut out): 3/8 teaspoon
  • Rolled Dough (fresh pasta, e.g.): 5/8 teaspoon
  • Cake/Cupcakes: heaping 1/4 teaspoon
  • Pastry: heaping 1/2 teaspoon
  • Pancakes: 1/4 teaspoon
  • Pizza: 1/2 teaspoon
  • Rolled Cakes (pumpkin roll, Swiss roll): 1 1/8 teaspoon

I've been eating gluten free

"I've been eating gluten free for ten years and had given up homemade bread because, at the time, gluten free flour options were mostly "make your own" recipes. I purchased Nicole's blend and xanthan gum and WOW! I've made three loaves so far in my bread machine using Nicole's bread machine recipe. I LOVE IT! I forgot how wonderful it feels to bite into a fresh loaf of bread. I'm still getting the hang of using the bread machine and smoothing the top so it looks pretty, but the taste is amazing!"

"I tried a recipe that recommended this brand of flour with a different brand mix and it was such a disappointment. This has proven to me that the mix matters and THIS is the real deal. No other mix will do for me! My pie crust was SO good and indistinguishably gluten free. 10 stars for sure."

Our family has the tradition

"Our family has the tradition of making Swedish Pancakes at least once a year! Since there are three of us who are Celiac, and we need about 45 cakes to feed the crew, having a trustworthy flour is critical! Nicole’s GF multi-purpose flour met the need perfectly! I make them a day ahead and let them cool individually on parchment paper and don’t stack until fully cooled. Then I can warm them covered with a damp towel the next day! I’ve finally found the right match!"

"Even though I haven't tried it I do want to salute Nicole for creating a successful gf flour without sorghum. Years ago there was a bakery nearby which called itself "Wheatless in Seattle". I enthusiastically went and ate things I hadn't had in years. The next day I felt the familiar kind of unpleasant symptoms I get when I've eaten something I'm allergic to. I called the bakery and they said ""Are you allergic to sorghum?" I had never heard of sorghum, but in fact I have a sensitivity to sorghum. So, thanks Nicole."
