What is gluten free flour?
Gluten free flour is any type of flour that does not contain any gluten. Gluten is a protein found in wheat, barley, and rye, and can cause digestive issues for people with celiac disease, gluten intolerance, or a wheat allergy. Our gluten free flour blend is made from a combination of non-gluten grains and starches, such as rice flour, potato starch, and tapioca starch.
Do I have to add anything to Nicole's Best to use it in a gluten free recipe?
Usually, the answer is yes. Unless you are making a recipe that specifically does not call for xanthan gum, you will need to add xanthan gum to the recipe, since Nicole's Best does not contain any. This allows precision in baking! Please use the Nicole's Best Usage Table below as a guide. What can I use gluten free flour for?
Our gluten free flour blend can be used in a variety of baked goods, including bread, cakes, cookies, and more. It can also be used as a thickener for sauces and gravies.
Why do I need this gluten free flour blend?
If you've followed the Gluten Free on a Shoestring blog for some time, you've noticed that Nicole's favorite all purpose gf flour blend has been Better Batter's classic blend. That's still a great blend, but it's not flexible enough to use for every application.
This Nicole's Best multi-purpose gf flour blend is flexible enough to use for everything from gf crepes and pancakes to gf yeast bread, and everything in between. It is the most versatile blend that Nicole has ever used and it works in all of her recipes, no matter the category.
I can't have dairy. Can I still use your flour blend?
No. Our multipurpose flour blend contains milk powder, which is a dairy product.
Is your gluten free flour organic?
No, our gluten free flour is not certified organic, but we use all high-quality, non-GMO ingredients in our flour blend.
Is your gluten free flour vegan?
No, our gluten free flour is not vegan because it contains cow's milk powder.
Is your gluten free flour nut-free?
Our gluten free flour does not contain any nuts, but it is produced in a facility that also processes nuts (peanuts and tree nuts). Although we take precautions to prevent cross-contamination, we cannot guarantee that our product is completely free of all traces of nuts.
How should I store your gluten free flour?
We recommend storing our flour in a cool, dry place, such as a pantry or cupboard. It can also be stored in the refrigerator or freezer for longer shelf life.
Can I use your gluten free flour as a 1:1 substitute for regular flour?
No. No gluten free flour blend can be used as a cup-for-cup (or gram-for-gram) substitute for conventional all purpose wheat flour in conventional recipes. Great gluten free baking requires great gluten free recipes, since even the very best gluten free flour blend behaves somewhat differently than any sort of wheat-based flour. But never fear!
