Nicole's Best Usage Guide for using xanthan gum with gluten-free flour: For best results, add the following amounts of xanthan gum to your recipes when using Nicole's Best. (Amount per cup) Muffins and quick breads: 1/2tsp, drop cookies: 1/4tsp, yeast bread: 1tsp, cookies (rolled and cut out) 3/8tsp, rolled dough (fresh pasta etc): 5/8tsp, cake/cupcakes: heaping 1/4tsp, pastry: heaping 1/2 tsp, pancakes: 1/4 tsp, pizza: 1/2 tsp, rolled cakes (pumpkin roll, swiss roll) 1 1/8tsp

Xanthan Gum and Gluten Free Baking

Unless you are making a recipe that is meant to be made without any binders, you will need to add xanthan gum to the recipe, since Nicole's Best does not contain any. This allows precision in baking, which leads to the highest quality baked goods.

Because Nicole will always be a recipe developer at heart, she will never claim that any multi- or all-purpose gluten free flour blend can perform well in conventional recipes as a 1 to 1 replacement for conventional wheat flour.
